I first stumbled across this recipe on TikTok, and after a few attempts, I’ve finally perfected my version. This is my fourth time making it, and now I feel confident sharing it with you.
A quick note: I’m pescatarian and have been meat-free for almost 15 years, so this is a plant-based version of lasagna soup. However, you can easily substitute your preferred meat in this recipe.
Ingredients
1 lb meat of choice (plant-based beef, ground turkey, or beef)
24 oz pasta sauce (your favorite kind)
48 oz water (or adjust to your desired consistency)
Seasonings to taste (salt, pepper, garlic powder, onion powder)
1 tbsp honey (optional, but adds depth to the flavor!)
1 cup of Shredded cheese
1 box of Lasagna noodles (broken into small pieces)
Instructions
1. Cook your meat of choice:
- If using plant-based beef, cook it directly in the sauce.
- If using real meat, season and cook it separately in a pan before adding it to the sauce.
2. Add pasta sauce and water to the pot. Bring to a gentle boil over medium heat. This is where I taste to add seasoning if needed.
3. Break up lasagna noodles into smaller pieces and add them to the boiling sauce.
- Cover and let simmer on low to medium heat, stirring frequently to prevent sticking.
4. Once the noodles are soft (about 9 minutes), remove from heat. Stir in honey (if using), then top with shredded cheese.
5. Serve and enjoy!
